Dairy Processing (ADPR1)

Curious about how cheese, yogurt, and ice cream are made? In this minor, you will explore the entire process of transforming milk into a variety of dairy products, both on a small and large scale. You will also get hands-on experience creating these products at Aeres’ dairy pilot facilities and during a company project.

This minor can serve as a springboard for a career in the dairy industry or equip you with the skills to produce dairy products on your own farm.

Why is differentiation so important in the dairy sector?
With the current challenges in the market, it’s important to  find new ways to create added value for the milk product and milk ingredients, both for farmers and multinational producers of dairy products. This requires out-of- the-box thinking and a willingness to adapt. One solution is to process your own milk into tasty dairy products and sell these products to customers in your own region. Another option is to develop new applications for dairy products in different markets.

Benieuwd hoe kaas, yoghurt en ijs worden gemaakt? In deze minor verken je het hele proces van het omzetten van melk naar diverse zuivelproducten, zowel op kleine als grote schaal. Je krijgt ook praktische ervaring met het maken van deze producten bij het Zuivelbedrijf van Aeres en tijdens een bedrijfsopdracht.

Deze minor kan dienen als springplank naar een carrière in de zuivelsector of je voorzien van de vaardigheden om zelf zuivelproducten te produceren op je eigen boerderij.

Waarom is differentiatie zo belangrijk in de zuivelsector?
Met de huidige uitdagingen in de markt is het belangrijk om nieuwe manieren te vinden om toegevoegde waarde te creëren voor melkproducten en melkingrediënten, zowel voor boeren als voor multinationale producenten van zuivelproducten. Dit vraagt om out-of-the-box denken en bereidheid om je aan te passen.
Een oplossing is om je eigen melk te verwerken tot smakelijke zuivelproducten en deze producten te verkopen aan klanten in je eigen regio. Een andere optie is om nieuwe toepassingen voor zuivelproducten te ontwikkelen in verschillende markten.

Deze minor wordt zowel in het najaar als in het voorjaar aangeboden.

Najaar: Elke maandag in periode 1 en 6 dagen met praktijklessen op andere dagen (andere minder belangrijke dagen kunnen worden meegenomen bij het maken van de groepsindeling). Periode 2: alleen enkele coachingslessen (deels online).
Voorjaar: Elke maandag in periode 3 en 6 dagen met praktijklessen op andere dagen (andere minder belangrijke dagen kunnen worden meegenomen bij het maken van de groepsindeling). Periode 2: alleen enkele coachingslessen (deels online).

 

 

Leerdoelen

The Dairy Processing minor is a hands-on experience with plenty of practical assignments, but it also includes engaging lectures and classes on topics like product quality and safety, product development, and the various stages of dairy processing. You will also go on field trips to dairy companies, giving you real-world insights into how to create and market dairy products that not only taste great but also become consumer favorites.

Through this minor, you will develop competencies in entrepreneurship and innovation.

ADPR1-04 Dairy Product Development

  • Develop in practice a new marketable and safe consumable dairy product by applying learned technologies 
  • Develop in practice the correct label information and product specification sheet for the new dairy product 
  • Organize the needs and work to manufacture the new dairy product 
  • Present the new dairy product with proof of the manufacturing technologies, quality assurance, financial aspects and marketing strategy 

ADPR1-05 Dairy Processing; Theory

  • Describe the manufacturing procedures and technology of dairy products
  • Describe the role of the different ingredients in dairy products 
  • Explain the correct hygiene procedures 
  • Explain the critical quality parameters of dairy products

ADPR1-06 Dairy Processing; Practice

  • Make different types of dairy products (e.g. cheese, yogurt, butter, ice cream) which are safe, tasty and marketable 
  • Explain the manufacturing procedures and technology of dairy products 
  • Apply the correct hygiene procedures 
  • Process dairy products according to the critical quality parameters 

ADPR1-07 Company Assignment

  • Process dairy products at a company according to specified requirements 
  • obtains insight into the operational practice of the placement company 
  • carries out a practical assignment in a self-responsible manner

Ingangseisen

The minor is taught in English to accommodate international students in the class. proficient communication skills in English are therefore essential. Additionally, you should be open to cultural differences and willing to engage with students from diverse backgrounds.

In terms of content, there are no entry requirements.

De minor wordt in het Engels aangeboden, omdat er ook internationale studenten in de klas kunnen zitten. Daarom is goede communicatie in het Engels (zowel schriftelijk als mondeling) een vereiste. Daarnaast moet je kunnen omgaan met cultuurverschillen en open staan voor internationale studenten.

Inhoudelijk zijn er geen ingangseisen.
