Dairy Processing (ADPR1)

Do you want to know how cheese, yogurt and ice cream are made? In this minor you will learn everything about processing milk into various dairy products (small and large scale) and you will make products like cheese, yogurt, butter and ice cream at the dairy pilot facilities at our school farm and during a company assignment. 

This minor can be the starting point for a career in the dairy industry or enable you to make dairy products at your own farm.

Why is differentiation so important in the dairy sector?
With the current challenges in the market, it’s important to  find new ways to create added value for the milk product and milk ingredients, both for farmers and multinational producers of dairy products. This requires out-of- the-box thinking and a willingness to adapt. One solution is to process your own milk into tasty dairy products and sell these products to customers in your own region. Another option is to develop new applications for dairy products in different markets.

Wil je graag weten hoe kaas, yoghurt en ijs gemaakt worden? In deze minor leer je alles over het verwerken van melk tot verschillende producten (kleine en grote schaal) en ga je zelf ook aan de slag met het maken van zuivelproducten op de schoolboerderij en tijdens een bedrijfsopdracht.

Nu de melkprijzen onder druk staan, is het voor ondernemers van groots belang om mogelijkheden te creëren om extra waarde toe te voegen aan hun producten. Eén mogelijkheid hiervoor is het zelf gaan verwerken van melk tot smaakvolle producten zoals boerenkaas en boerderij-ijs.

Waarom is het belangrijk je te onderscheiden?

De huidige uitdagingen in de markt vragen om ondernemers en bedrijven die nieuwe mogelijkheden creëren om extra waarde toe te voegen aan zuivelproducten. Eén mogelijkheid hiervoor is het zelf gaan verwerken van melk tot smaakvolle producten zoals boerenkaas en boerderij-ijs. een andere optie is om nieuwe toepassingen te ontwikkelen voor zuivelproducten in verschillende markten.

In de minor komen de volgende aspecten aan bod:

  • Praktijkopdrachten: maken van verschillende  zuivelproducten
  • Excursies naar zuivelproducenten
  • Verwerkingsstappen van zuivelproducten
  • Productkwaliteit en veiligheid (b.v. ingangseisen melk, smaakbeleving consument)
  • Productontwikkeling (bv. ontwikkelen nieuwe producten)

What will you learn?
Although Dairy Processing is definitely a hands-on programme with plenty of practical assignments, there are also lectures and classes on product quality and safety, product development and the different stages in dairy processing. Along with field trips to dairy companies, this will help you to learn how to produce and sell dairy products that appeal to people’s taste buds and are at the top of consumers’ shopping lists.

ADPR104: new product development

  • Develop in practice a new marketable and safe consumable dairy product by applying learned technologies
  • Develop in practice the correct label information and product specification sheet for the new dairy product
  • Organize the needs and work to manufacture the new dairy product Present the new dairy product with proof of the manufacturing technologies, quality assurance, financial aspects and marketing strategy

ADPR105: dairy processing theory

  • Describe the manufacturing procedures and technology of dairy products
  • Describe the role of the different ingredients in dairy products
  • Explain the correct hygiene procedures
  • Explain the critical quality parameters of dairy products

ADPR106: dairy processing practical

  • Make different types of dairy products (e.g. cheese, yogurt, butter, ice cream) which are safe, tasty and marketable
  • Explain the manufacturing procedures and technology of dairy products
  • Apply the correct hygiene procedures
  • Process dairy products according to the critical quality parameters

ADPR107: company assignment

  • Process dairy products at a company according to specified requirements
  • Obtains insight into the operational practice of the placement company
  • Carries out a practical assignment in a self-responsible manner

Ingangseisen

The minor is offered in English, as there are also international students in the class. Therefore, good communication skills in English is a requirement. In addition, you must be able to deal with cultural differences and be open to international students.

In terms of content, there are no entry requirements.

De minor wordt in het Engels aangeboden, omdat er ook internationale studenten in de klas zitten. Daarom is goede communicatie in het Engels (zowel schriftelijk als mondeling) een vereiste. Daarnaast moet je kunnen omgaan met cultuurverschillen en open staan voor internationale studenten.

Inhoudelijk zijn er geen ingangseisen.
